What’s summer without a salad?

I love salads especially the ones that aren’t just appetisers but actually fill you up. Here’s a protein rich chickpeas salad that I ate for lunch today. With the perfect balance of sweet and savoury & creamy and crunchy, it tasted fantastic.

Recipe:

Dressing –

Veeba low cal garlic mayonnaise+ veeba southwest/thousand island dressing + lemon + juice + olive oil+ salt + white pepper powder.

Mix together-

Chickpeas, diced veggies (onions, cucumbers, bell peppers, tomatoes) and torn salad leaves. Pour the dressing and mix well. Top with fresh parsley.
